so i used a tom colicchio recipe for marmalade. obviously i tweeked it.
i used about 40 kumquats sliced into thirds and seeds removed
i boiled 1/2 cup of sugar and 1 cup of water a couple of chopped garlic cloves 1 teaspoon crushed peppercorns and 1 branch of chopped rosemary. once everything was melted i simmered it until the kumquats were translucent. his recipe didnt have garlic or salt in it. it was delicious. so very very very delicious.
