But the star of the dish was the butternut squash....
So what you do is this....peel and chop one squash into small pieces....chop 2 red onions into relatively large pieces....throw in a small handful of peeled whole garlic cloves...add about one pound of brussel sprouts cut in half....toss in olive oil salt and freshly ground pepper....you could also add a tablespoon of finely chopped rosemary and thyme....i was too lazy to do that last night though....place your vegetables in a 400 degree oven in a shallow baking pan or jelly roll type(that's what i used) for about 45 to 50 minutes....Then about 10 to 15 minutes before your veg is done boil water and when your veg should be coming out you can be adding a half a pound of pasta to your salted and oiled water....i used cavatapi....when the pasta is done per their instructions about 9 to 11 minutes....drain and dump water but save a little like 3 tablespoons worth....then i throw everything back into my pasta pot including the vegetables along with a cup of cheddar or about 4 ounces....you could also use Parmesan as well toasted pine nuts might be good in this too....then stir and serve....be sure to taste to see if you need to adjust seasoning....and enjoy....this fed four of us with leftovers... add a green salad to complete your meal...hooray!
