Wednesday's Lunch

I am already thinking about lunch...I hope it is as good as this one but I am feeling lazy today...

There is nothing like pan roasted grape tomatoes, shallots, and garlic chunks in olive oil(which by the way I forgot to buy at the market this morning)...Throw in some herbs De Provence and left over chicken breast and the top picture is what you get!

  4. Looks SO GOOD! We do the same thing but in the oven- my husband calls them "Take a Hike Tomatoes" because we usually throw them in the oven at 350 degrees, take the dogs for a long walk, and come home and they're done. Add some toasted pinenuts and YUM. I'll have to add the shallots next time- that looks SO damn tasty.
